Candy Corn - Ice Cream Muffin Cones

You're probably thinking, this is not such an original idea - but really it is.  I think.  I found this super old recipe - (older than me) - and have never heard of such a thing.  Ice Cream Muffins.  Yes, muffins with ice cream in the ingredients.  So I got to thinking these would make perfect "Ice Cream Cones".  And decided to make them fit into my Candy Corn theme.

Plus, I finally found some mini ice cream cone cups. 

I had been looking for them all summer, and now summer is over...but it's not over for my cones.

It's a simple recipe with things you probably have on hand. 

Unless you got into the ice cream last night and finished it off - shame on you! 

So here it is, the one and only Candy Corn Ice Cream Muffin Cones!  

Lucky for me I had everything on hand.


Mixed it up just like it said.


Put the cones in a muffin pan.


Filled them 3/4 full, or maybe a little fuller?


And baked and decorated.


Just in case you want to make some too, here's the recipe.

CANDY CORN ICE CREAM MUFFINS CONES

1 1/2 cups flour
1 tlb. baking powder
1 tsp. salt
1 egg
2 tlbs. oil
2 cups vanilla ice cream, softened

Mix flour, baking powder and salt in bowl.  Add egg, oil and ice cream; mix just until moistened.  Fill mini cones 3/4 full.  Bake at 425 degrees for 10 - 15 minutes or until golden brown.

Let cool and top with swirl of yellow frosting on the bottom, swirl of orange frosting in the middle and top it off with white frosting and a few sprinkles.
