Easy Country Oat Bread!

I wanted to share the easiest bread recipe ever!  Well, it might not be as easy for you as it was for me.  While I sat and decorated cookies my daugher made it, and then I ate it.  So I loved it even more.  You know how things taste better when you don't make them yourself?  Like a salad?  This really was yummy, and if you make it yourself, you probably will like it too!

Country Oat Bread


 ¾  cup boiling water
½ cup regular oats
3 Tlb. Shortening
¼ cup light molasses
1 tsp. salt
1 pkg. active dry yeast
1/4 cup warm water (105 – 115 degrees)
1 egg
2 ¾ cups all-purpose flour
1 egg white, slightly beaten
¼ cup regular oats, crushed
¼ tsp. salt
Grease 9” x 5” x 3” loaf pan.  Combine boiling water, oats, shortening, molasses and 1tsp. salt in large bowl;  cool to lukewarm.  Dissolve yeast in warm water.  Add yeast, egg and 1 ½ cups of the flour to the oat mixture.  Beat on medium speed 2 minutes, scraping bowl frequently.  Stir in remaining flour until smooth.
Smooth and pat batter in pan with floured hands; brush with egg white.  Mix ¼ cup oats and ¼ tsp. salt; sprinkle over top.  Let rise in warm place about 1 ½ hours or until double.
Heat oven to 375 degrees.  Bake 50 – 55 minutes or until loaf is brown and sounds hollow when tapped.  Remove from pan; cool on wire rack. 
Makes 1 Loaf


Another reason why I wanted to post this recipe is to see if I remembered how to make a printable version!  And by golly, I think I did!  Although I don't know why the little blue ribbon is on the printable - maybe this recipe won a blue ribbon at the County Fair!  :)
