Chocolate Cherry Caramel Apples!

Happy Valentine's Day my party people!  Today I'm joining SHERYL @ LADY BEHIND THE CURTAIN  for a dessert challenge.  While I'm not always up for a challenge, I'm always up for dessert.  The two ingredient challenge for today's dessert was chocolate and cherry.  She had me at chocolate. 
 
The hardest part of this challenge was coming up with something that you haven't seen before.  And  THAT my friends was a challenge.  So after changing my mind over and over again, I decided to make Chocolate Cherry Caramel Apples.
 Underneath all the drizzle, you'll find caramel, peanuts, maraschino cherries, mini marshmallows drizzled with red, white and milk chocolate.  In a word - OUTRAGEOUSLY GOOD.  Okay, it deserves two words.  In a few simple steps you can be chomping away on these apples too.
You'll notice I didn't show any caramels.  That's because I made homemade caramel, but you don't have to, I've heard that Kraft makes delicious caramels!  :)  Just in case you want to make your own caramel, here's the recipe:
1 1/4 c. light brown sugar, firmly packed
2/3 c. light corn syrup
2/3 c. whipping cream
1/2 stick butter
1/8 tsp. salt

Combine all ingredients in medium saucepan. Stir over low heat until sugar dissolves (about four minutes). Increase heat to medium-high. Boil sauce without stirring until mixture registers 238 degrees (softball stage) on candy thermometer, about 11 minutes. Cool.
Can be used over ice cream or to dip apples.
Wash and dry your granny smith apples.  Dip them in the caramel and roll in chopped peanuts.  Press in marshmallows, peanuts and cherries before the caramel sets.  Drizzle with melted chocolate chips, red candy melts and white candy melts.  And if you want, you can package them up all pretty ~ Gangnam Style...oops I mean Gingham Style.

    1. Thank you Vanessa - I was pleased with the end result too. One of my favorite all time treats have been caramel apples, so why not add more sweet to the treat!!

    1. I'm pretty sure they are healthy because the base is an apple! :) If I had been eating one of these apples a day, I probably wouldn't have got the flu!
