The Lime and The Coco-NUT!

When I found out that LIME and COCONUT would be the ingredients for this months dessert challenge, I immediately thought...coconut key lime pie.  And as the time came closer for me to create this dessert, I was not feeling too well.  I I recently devoured quite a bit of chocolate and making more sweets didn't seem like such a good idea.  If you know me at all, I could live on sweets and sometimes I do.  (Hence, the not feeling well part.)  In the back of my mind I thought about another option instead of a super rich dessert and that option was fruit.

Topped with a homemade granola that is so good you will duct tape the container closed so you don't eat too much.  (I don't know about you, but duct tape comes in quite handy in my kitchen).
 
Before I give out the recipe, I feel I should tell you why I titled this post Lime and The Coco Nut.  I wanted a special kind of coconut - and I've only found it at a sweet little market called "Sprouts".  This trip was a win win because Sprouts is located right next to a brand new "World Market". 
 
So excited to get into World Market, I grabbed my hand bag out of the back seat and headed into the store.  Had myself a jolly good time in World Market and then wondered over to Sprouts.  Found the coconut I was looking for and headed back to the car. 
 
You're probably wondering why I am telling you this...it's to restore your faith in mankind.  When I arrived at my car, I found I had left my driver's side door wide open.  I was gone for an hour and a half or so and no one touched anything in the car.  People came and went about their business and left my car AND stuff alone.

So I am the NUT in the coco-NUT!
 
 
Okay, now on to the recipe.  It's one I don't usually give out, but since you read my coconut story, I feel I owe it to you.

Any combination of fresh berries - I used:
1 cup blueberries
2 cups strawberries
I would have added blackberries if I had them on hand. :)
 
DRESSING
1/4 cup fresh lime juice
1/4 cup honey
1 tsp. orange zest
1 tsp. lime zest
1/2 tsp. grated fresh ginger
Dash of salt

DIRECTIONS
In small saucepan, over low heat, combine the lime juice, honey orange and lime zests, ginger and salt.  Whisk until warm and blended.  Remove from heat and set aside to cool.
 
Toss all the fruit together with the dressing and refrigerate 1 or up to 6 hours.
Just before serving, top with yogurt (I used frozen yogurt) and granola.

4 cups old fashioned oats
2 cups flaked coconut
2 cups sliced almonds
1 1/2 cups dried cranberries
1/3 cup vegetable oil
1/2 cup honey
2 tsp. ground cinnamon
 
DIRECTIONS
Preheat oven to 350 degrees F.
 
Toss the oats, coconut, almonds and cranberries together in a large bowl.  Pour the oil and honey over the oat mixture.  Add the cinnamon and stir with a wooden spoon until all oats and nuts are coated.  Pour onto a jelly roll pan and bake 20 minutes.  Stirring occasionally.
 
Stir in an airtight container sealed with duct tape.
 
 
Now, doesn't that sound like a refreshing way to start the day this mother's day?  It would be the perfect breakfast for me...minus the milk.

(I just wanted to use my new straws)!

  5. Why am I not surprised by this story? Thinking back about the spaghetti, etc.! I am impressed you actually remembered your purse as I remember having to remind you to pick it up and actually take it with you! :)

  8. Great story! Sprouts and World Market next to each other ... sounds like danger! I was at World Market yesterday and Michaels is next door ... a definite danger stop!

  10. Kim,you don't tell anyone I left the door open on my car too...and we had just been shopping for Christmas...and car was packed with gifts, thankfully nothing went missing and my car was still there. yay.

    This looks like a delicious and healthy breakfast for any day. I love everything about this.
