Ice Cream Cookies!

I seriously thought about naming this post "The Unofficial Guide to Royal Icing".  Recently I've been playing around with royal icing and have found a new love (please don't tell buttercream).  After creating the 70's Theme Cookies, there is no stopping me now...

The silky smooth texture, clean edges...oh, and the clean up - what's not to love? 

Although I've never really been able to master the 20 second rule, the 10 second rule, or any royal icing rule out there. 

Maybe it's because being a baker, I need exact amounts. 

Like, do you count one one thousand, two one thousand, or just count slowly or even set the timer?

So I just started with a recipe and added stuff until I thought it looked like the right consistency.

Here's the "Scoop"
 
Choose a ice cream cone cookie cutter and bake your cookies.
 
I used a clay impression mat, only I use it for fondant because you can't eat clay.
 
Roll out brown fondant and then press the mat over the top with your fondant roller.
 
Press it on diagonally so your cone will look like a waffle cone.
 
Using the same cutter, cut out the waffle cone and trip the top.
 
Add a bit of Karo syrup to the back and stick on the cookie.
 
Now it's time to mix up that royal icing, divide it into three colors (if you want to be really creative, add a little strawberry flavoring to the pink icing and cocoa to the chocolate icing) then fill the pastry bags.
 
These little bags are the dream child of Anita of Sweet Hope Cookies. 
 
Looks like I came into the royal world at just the right time -  snip the end to pipe the icing on your cookies and when you're finished, toss the bag out.
 
Now pipe a bit of icing dripping down the cone and fill in the vanilla scoop.
 
Next, do the same thing with the strawberry ice cream, and top with a bit of chocolate ice cream. 
 
Add sprinkles and a cherry (red Sixlets) on top.
 
Eat it quick. it's melting!
 
Just in case you don't like cones, I've scooped some in a dish~
 
Quick, grab that piping bag...
 
Sketch your design on a paper and bake your cookies.
 
Pipe the bowl of the cookie first, then the base, now add your first scoop of ice cream, chocolate...

then strawberry and a scoop of vanilla on top.

Not done yet...add a little more toppings - drizzle, sprinkle and a cherry on top!

  3. I am so happy you are using royal icing! I love all your cookies and these ice cream cookies are perfect! I love the mixture of fondant and RI. The sprinkles on top are the perfect touch! LOVE!!

    1. Thank you for saying that about the bowls, I wasn't sure if I should have used a dark colored icing to make it look like fudge. I was too tired to mix up another color - lol!
