Never Melt Ice Cream!

After going through my new Cupcakery book, I couldn't wait to get started baking.  Would you believe Toni created a cookie dough frosting recipe? Everyone else might see cookie dough, I saw Ice Cream!  Finally, I had a reason to use the set of ice cream dishes that had been waiting patiently for such a long time.  NOW IS THE TIME!

I love being able to make up desserts to serve later with no last minute preparations.  This recipe worked perfectly.

When seeing the cookie dough cupcakes stacked in the book, I knew this recipe would work perfect for my ice cream cups.

A pack of four cups and spoons from Hobby Lobby.

Instead of baking cupcakes, I baked two 8" square cakes.  After baking the cakes, I wrapped in saran wrap and froze them to make cutting easier.  (Probably the reason for the wrinkles on top)

Measure a deep round cookie cutter to fit inside the ice cream cups.

Cut out four circles from one 8" layer.

Place inside the cup.

Lay a piece of saran wrap on top of the cake and press down.  Making the cake sit just below the top of the ice cream cup.

Grab your Cupcakery cookbook and mix up the Cookie Dough Frosting or see the recipe below.

Scoop out the frosting with a giant scoop and place on top of the cupcake and insert spoon.

Try not to dig in.

This might help...Wrap them up as soon as you're finished and give them away!  Only ONE of the cupcake ideas I have come up with since looking through Cupcakery.  It won't be long until I make another. 

Cookie Dough Frosting

Ingredients

1/3 cup brown sugar
3/4 cup flour
6 cups powdered sugar
1 1/2 cup unsalted butter
1 1/2 tsp. vanilla extract
6 -8 Tbsp. milk
1 cup quick oats
3/4 cup M & M's
3/4 cup mini chocolate chips

Directions

In a large mixing bowl, whisk together brown sugar, flour, and powdered sugar and set aside.  In the bowl of a stand mixer (or large mixing bowl) using the paddle attachment, cream butter at medium speed until soft and smooth.  Add vanilla extract and beat until combined.  Slowly add in dry ingredients, beating slightly between each addition.  Add mild one tablespoon at a time, beating in between additions until at desired consistency.  Turn mixer up to medium-high and beat for 1-2 minutes.  Fold in quick oats, M & M's, and mini chocolate chips.
