Mickey Pumpkin Cheesecake!

After making the Disney themed Halloween cookies for my sister's party, I knew the guests would want to take them home.  So I still needed to make a dessert and Mickey wanted to get dressed up for the party.  This is why the Mickey Chocolate Chip Pumpkin Cheesecake was created.

When I think of all the pumpkin desserts I love, pie is not one of them.
Cheesecake?  Yes.
I remembered making this Chocolate Chip Pumpkin Cheesecake years ago and loving it.
It's a Halloween party, it's Disney themed, so why not, right?

And to make Mickey part of the party, he came in his mask.
I wonder if they'll know who he is?


I got busy baking.

And followed the recipe HERE.
With this recipe and using the Mickey pan, you'll have enough leftover to make another smaller cheesecake.
I knew Mickey would want to come dressed up.

With a mask.
And because Wilton makes Pumpkin Spice Candy Melts, I knew they would be the perfect topper for the mask.

Sorry for the dark photos, I was working in the lab late one night.
Start by melting the Wilton Pumpkin Spice candy melts in a microwave safe bowl.
Pour into Mickey pumpkin mold.
Freeze until solid.
Carefully release and remove from the mold.
Now you'll have a solid pumpkin spice Mickey.
I realize this will be too hard to cut, don't worry.
You can break the pumpkin spice candy into pieces and stick into the top of each piece of cheesecake before serving.

Next you'll need to make a mask.
That is if your Mickey is dressing up.
Roll out a piece of black fondant.
Cut with an oval-ish cookie cutter.
Trim the bottom with a plaque cutter.
Cut out ovals for the eyes.
Make holes in each side and string with ribbon.

Mickey is ready for the Halloween, are you?
