St. Patrick's Cookies!

Only two days away and you'll be seeing green. 
I'm seeing cookies and thought you'd like to see too.

Show Me the Shamrocks!


I'm starting with buttercream cookies.

Because what Leprechaun doesn't like buttercream?

Here's a few photos of the process.




Find a cute basket to place the cookies in.

Bake rectangle scalloped cookies.

Make sure they fit in the basket.



Now that the cookies are baked, grab white, lime green and leaf green buttercream.

Find all the green and white sprinkles in your cupboard.

Pipe lines, squiggles and designs across the white buttercream base.

Cut fondant shamrocks and add to a few of the cookies.

Because you want to use that basket, let the cookies sit overnight so the frosting forms a crust.

Stack VERY carefully in the basket.

Slide into cellophane bag.

Tie with green and white tulle.

Quickly, hand off the cookies before they get smooshed.

More buttercream cookies...







A favorite for sure...using royal icing.

Dipped and decorated!

    Did the Buttercream frosting make the cookies soft?
    What recipe did you use for the cookies?

    How do I get on YOUR "hand off" list??? I promise not to smoosh them!!!

    1. Thank you Karen, it is the type of cookie that makes them soft not the buttercream frosting. If you Google soft sugar cookies you should find a few recipes to choose from. Hope this helps and if you were close by I'd be happy to hand some off!!

  6. Is there such a thing as buttercream cookies or is it a cookie with buttercream frosting? Also does buttercream frosting smudges easily.Looking for a frosting that is hard when dried but not hard as royal icing. The frosting on the St Pat cookies, do they get damaged when stacked? Would love your advice.

    1. There really isn't such a thing as a buttercream cookie, rather a buttercream frosting. The buttercream will form a "crust" if you let it sit overnight and then they are able to be packaged. They cannot be stacked unless they are individually packaged, then only stack two deep. Hope this helps! :)
