Star Ice Cream Bars!

I'm so excited to share this cool treat with you today, in fact it's so cool, it's frozen! 
A DIY Star Ice Cream Bar
 And the coolest thing about these bars was how simple they were to make. 
The possibilities are endless, as I've got a bunch more cool ideas floating around!

I started with the Wilton silicone mold and Dreyer's Slow Churned Yogurt which I thought was ice cream. 
 
I don't know how I ended up with this, but I loved the taste. 
 
Maybe it was because as I was reading all the ice cream labels, I got the look, you know that look, like "what on earth is taking so long, just pick a carton"! 
 
So thanks to my hubby's impatience with me, I have found a new "Ice Cream"! 
 
I let it soften enough to fill each star mold. 
 
Then I leveled off the top with an off set spatula and froze overnight.
 
Next I made the chocolate shell to dip the ice cream in. 
 
After mixing it up, I poured it into a smaller, deeper bowl.
 
After letting the ice cream stars freeze over night, I removed them from the mold and inserted wooded skewers, one at a time. 
 
Then I dipped each one in the chocolate shell.
 
 Planning ahead, I got out my FUN tastic pack of paper straws, from the CAKE POP STAND COMPANY and pulled out the red and white straws, to cover the wooden skewer.
 
For a little added fun, I sprinkled each chocolate star with red, white and blue jimmies before the chocolate shell set up. 
 
Of course you could serve the Star Ice Cream Bars laying down, either way, they taste great...because I put LOTS of chocolate on each star.

Ingredients

Chocolate Shell
  • 3 tablespoons coconut oil
  • 1 1/3 cup chocolate chips
Ice Cream
 
Instructions:
 
Chocolate Shell
Mix coconut oil and chocolate chips together in microwave safe bowl.
Heat in microwave for 30 seconds, remove from microwave and stir.
Continue heating and stirring, 15 seconds at a time until completely melted.
Stir until blended and ready for dipping.
 
Ice Cream
Soften ice cream and scoop into desired mold. Freeze overnight and remove from mold. Insert stick into the ice cream and dip into the melted Chocolate Shell, return to freezer until serving.

  4. How cool are these, Kim? Pin intended too, hehe. That's a great find with the ice cream being soft enough to put in the moulds, don't think I've found any you could possibly do with this other than churning ice cream to partially frozen but soft enough to fill.

    I don't know how you manage to keep coming up with all these wonderful ideas and creations. I'd be in a funk by now.

    1. Oops Lisa, did I forget to mention the ice cream was actually frozen solid, I just left it on the counter to soften enough to fill the mold. I'll add that to the directions! No way would you be in a funk, you're a lean mean baking machine! :)

  5. This is a fantastic use of the star silicone mold. These ice cream bars are the perfect treat for our hotter than hot 4th of July. They would really help to cool people off.
