Pot 'O Gold Cookies!

You bet your shamrocks I made gold cookies.  Okay, if I could make real gold cookies, I'd make them for every holiday, in fact I'd make them everyday.  But for now these golden cookies are the closest thing I've got.  I think you're going to love them.

I think the better title for the post should be Lucky Shamrocks.  Because whoever (or is it whomever?) receives the cookies is one lucky leprechaun, they are magically delicious!

Shamrock Cookies with Pot of Gold

What started out as a great idea, soon turned into a not so great idea.  After I messed up one cookie, I wanted to bite the stem off all the shamrocks.  Instead of eating all the cookies, I left them alone for awhile and then started again.  It was worth the wait, because I actually ended up loving what I didn't plan to do.

Feeling the Green with Shamrock Topped Brownies!

So many ways to serve a brownie...This past weekend my husband and I went out for dinner, I sat and watched as the couple next to our table shared this delicious looking brownie topped with ice cream.  I don't know how it works for them, but when we share dessert, it means he gets a couple of bites and I get the rest.  That's just the way it is.  Only this time, it isn't.  Because this time, there are plenty of brownies and shamrocks and ice cream to let him have his own.

My Irish eyes are smilin'!  Okay, my eyes are not Irish and neither am I, but my eyes are definitely smilin' because of the yumminess of these chocolate mint brownies.  They are so dense, moist and delicious I could not stop at one.  So I had two...or maybe three.  Then I stopped counting.

I'm just about to Sham ROCK your world - I finally found that pot of gold.  Sort of.  Not only will you be helping out your local Girl Scouts, you'll also have more gold than you know what to do with.  Depending on how many boxes of Thin Mints you buy.  One box will make FOUR pots of gold!

I've always wished I could travel to the end of the rainbow to find that pot of gold, I just haven't had enough time.   And now with blogging, I REALLY don't have enough time, so if you happen to find that pot of gold, I was wondering if you would be willing to share?  If not, you will have to make your own little pot packet of gold.
