Another day in the classroom. The Sugar Art Classroom that is. I needed a beautiful design for my Carrot Cake that didn't involve little squiggle carrots on top, this was not the cake for carrots. I wanted it to be elegant and rustic to go with a fall themed dessert table. And I think it would beautiful on a Thanksgiving table as well, don't you?

I found my cake design at SugarEd Productions Sugar Art School.
Only I decided to make a Carrot Cake with Cream Cheese Frosting!
I've used my Russian decorating tips in the past, but didn't know if they would work with cream cheese frosting.
I had to play with my recipe to make it the right texture and finally got it to work.
After mixing my cream cheese icing I colored it and added a bit more powdered sugar for the flowers.

As far as the decorating goes, it's the design of Sharon from SugarEd Productions.
After watching the video, I carefully decorated the cake.
And to my surprise, I didn't have to scrape off any frosting and start over!
Okay, I had to replace several flowers until I got the texture.
