Mini German Chocolate Cheesecakes!

This one almost got away from me, I had so many desserts I panicked when I thought I had forgotten to photograph the Mini German Chocolate Cheesecakes.  Looks like I didn't need to panic...I got photos and even remembered to serve them.  Have you ever hosted a party and after the guests were gone, you find something you forgot to serve?  Yea, me too.   I guess after all the work and the way they ended up so cute, it would have been reason to panic if they were forgotten.  They are now gone, but not forgotten!

And yes, they taste as good as they look.
That is, if you like German Chocolate and Coconut.
I don't just like German Chocolate Cheesecake, I love it!
Which might be odd, because if I'm choosing chocolate it would always be dark chocolate.
I'm making an exception today.
After mixing the crust, I scooped out enough to fill the bottom of each cavity in my mini spring form pan.
I then pressed the crust tightly in the bottom and baked according to directions.
Then I scooped the filling over the crust and baked again.
The rest is history.
No photos of the frosting, nadda, none, zilch.
What I can say, after making waaaay too much frosting, I used a cookie scoop to top each cheesecake with the frosting.

Each cheesecake was placed under a little glass dome, which was decorated with lace and jute.
Ready to be gobbled up at the party.
Along side the cheesecakes, were lace topped brownies.
Each brownie was topped with edible cake lace and served on a doily.
Just like this!
Bite right into the brownie and eat the lace.

Or peel the lace off before biting!
Just don't buy the lace, make it.
Because fabric lace would not taste good on a brownie!

And there is not beef in the trifle.

Mini German Chocolate Cheesecakes

Ingredients
 
For The Crust
  • 1 cup crushed chocolate wafer cookies
  • 1/2 cup sugar
  • 3 Tbsp. butter or margarine, melted
For The Filling
  • 3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
  • 1/4 cup flour
  • 1/2 cup sugar
  • 1 pkg. (4 oz.) BAKER'S GERMAN'S Sweet Chocolate, melted
  • 2 teaspoons vanilla
  • 3 eggs
For The Topping
  • 4 egg yolks
  • 1 can (12 oz.) evaporated milk
  • 1-1/2 tsp. vanilla
  • 1-1/2 cups sugar
  • 3/4 cup butter
  • 1 pkg. (7 oz.) coconut (2-2/3 cups)
  • 1-1/2 cups chopped pecans
Instructions
 
For The Crust
Preheat oven to 350°F
Mix chocolate wafer crumbs, sugar and 3 Tbsp. butter; press firmly onto bottom of pan.
Bake 7 - 10 minutes
 
For The Filling
Beat cream cheese, sugar and flour in large bowl with electric mixer on medium speed until well blended. Add chocolate and vanilla; mix well.
Add 3 eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.
Bake at 350°F
15-20 minutes
 
For The Frosting
Beat egg yolks, milk and vanilla in large saucepan with whisk until blended.
Add sugar and butter; cook on medium heat 12 min. or until thickened and golden brown, stirring constantly. Remove from heat.
Add coconut and nuts; mix well. Cool to desired spreading consistency.

  2. i don't think i could eat anything at your parties. only because i would just sit there and marvel at all the awesomeness. if i had a camera in my stomach i would probably inhale them but i don't think they would look as good there! LOL :>O
