My Irish eyes are smilin'! Okay, my eyes are not Irish and neither am I, but my eyes are definitely smilin' because of the yumminess of these chocolate mint brownies. They are so dense, moist and delicious I could not stop at one. So I had two...or maybe three. Then I stopped counting.

Just a few simple steps and then YOUR Irish Eyes will be smilin'...
Brownie Layer
1/2 cup unsalted butter, cut into pieces
4 oz. unsweetened chocolate, chopped
1 1/4 cups sugar
1 tsp. vanilla extract
2 large eggs
3/4 cup flour
1/4 tsp. salt
Mint Filling
1/2 cup unsalted butter softened
3 oz. cream cheese
2 cups powdered sugar
1/2 tsp. mint extract
4-5 drops green food color
Chocolate Ganache
1 cup heavy whipping cream
1 cup bittersweet chocolate chopped
Directions
BROWNIES
Preheat oven to 325 degrees and prepare an 8" x 8" baking pan, lining it with foil and spray with Baker's Joy. Carefully melt the butter and chocolate using a double boiler. Stir in sugar and vanilla extract. Add eggs one at a time, mixing after each. Add the flour and salt and mix until the batter is smooth. Pour the brownie batter evenly into the prepared pan. Bake for 25 minutes, removed from oven and cool completely.
MINT FILLING
Cream together butter and cream cheese until well blended. Mix in powdered sugar until smooth. Add mint extract and food color. Spread on top of cooled brownies. Refrigerate until firm.
GANACHE
In a heatproof bowl over a saucepan of simmering water, melt the chocolate and whipping cream. Spread over mint filling, refrigerate until firm. Remove from pan by lifting sides and cut into 1" squares.
