You bet your shamrocks I made gold cookies. Okay, if I could make real gold cookies, I'd make them for every holiday, in fact I'd make them everyday. But for now these golden cookies are the closest thing I've got. I think you're going to love them.
One way to find a pot of gold is to make it, then it's a sure thing.
And when I found the little pot, I was so excited, I wanted to buy them all and almost did. But really who needs more than one pot of gold?
I wasn't sure how the round cookies would turn out, but it looks like I was LUCKY because the cookies didn't spread and lose their shape. I mean I probably should have bought a lottery ticket.

Let's see if you're lucky.
I started by baking 1 1/2" round cookies.
Added white royal icing to the top of each cookie. I also think it would have worked by using yellow royal icing. Let dry.
Then comes the fun part. Making them GOLD!
Using an airbrush and Americolor gold sheen airbrush color, I sprayed one coat of color on each cookie. Let the first coat dry and added another.
Continue coating the cookies with gold until you achieve your GOLDEN color.
Next I decided to top each cookie with a green shamrock, but not after admiring the shimmer from all angles.
I cut green fondant with a mini shamrock cutter and placed one on the top of each gold cookie.
