After making the Disney Themed Christmas Cookies, I just couldn't stop. Maybe you don't have the time to make the Disney themed sugar cookies? Don't worry, with Mickey Mouse cutters and molds in hand, I put them all to good use. One of my sister's favorite cookies from the party.
Taking one of my favorite Christmas combinations, Chocolate & Gingerbread, I made Mickey cookies with chocolate Ears! Now that's the kind of ear I'd like to nibble on.
Chocolate Gingerbread Mickey!
Once the cookies were baked and cooled, I dipped those mighty mouse ears in chocolate!
Roll and cut your favorite gingerbread dough with a Mickey Mouse cookie cutter.
Bake and cool.
They turned out so cute, wouldn't they be the perfect addition to the sweet shops at Disney?

While the cookies are cooling, melt a package of chocolate.
I love my chocolate dark, so I used Ghirardelli semi-sweet chocolate. You could always use milk or even white chocolate.
I recently purchased the melting pot made by Wilton and I love the consistent temperature it keeps the chocolate.
Roll and cut green fondant with a holly plunger cutter and set aside.
Dip the ears in the chocolate and add a holly leaf and pipe three dots with red frosting for the berries.
