There are Scotcharoos and then there are Birthday Scotcharoos. It's like a Rice Krispie Treat dressed up, ready to party. It is the perfect birthday treat for my daughter who is gluten free and the perfect treat for me because I LOVE Scotcharoos! They have been a family favorite since I was a little girl and I love them as much now as before. Maybe better because they are cuter than before!
Birthday Scotcharoos!
Instead of just pouring the chocolate mixture over the top, I made a design with a Wilton mold.
And I love the result!
Here's how~
Mix up a batch of scotcharoos. Recipe below.
Next, melt the chocolate chips and butterscotch chips, stir until smooth.
This is the mold that started the scotcharoo celebration.
Pour the melted chocolate into the mold.
Freeze until solid.
Remove the chocolate from the mold.
Lay a chocolate bar on top of the scotcharoos and cut to size.
Add a spoonful of chocolate to the top and top with the chocolate bar.

Ingredients
- For the Bars
- 1 cup light corn syrup
- 1 cup sugar
- 1 cup peanut butter
- 6 cups rice krispie cereal
- For the Topping
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
*For the Bars*
Place rice krispie cereal in large mixing bowl.
Place corn syrup and sugar into medium saucepan.
Cook over medium heat, stirring constantly, until sugar dissolves and mixture begins to boil.
Remove from heat.
Stir in peanut butter and mix well.
Pour over cereal, stir until coated.
Press into 13" x 9" pan coated with cooking spray.
*For the Topping*
Melt chocolate and butterscotch chips together in small saucepan over low heat, stirring constantly.
Spread over rice krispie treats.
(Or fill mold with chocolate and freeze, remove from freezer and add to the top of the bar.)
Time to Celebrate!
They certainly ARE cuter! What a genius idea and who doesn't love butterscotch. I need to get my hands on this awesome candy mold. :)
