Mini S'more Pie!

I made it mini, but you can make it any size you want.  Individual desserts are always a win win in my book because I love being able to set them out for people to serve themselves.  Plus, when cut into for a photo, I only have a small amount to eat versus an entire pie.  Because you know what happens when I'm left alone with sweets.  Anyway, I needed to get this made so you can enjoy it over the weekend too!

I made these in mini graham cracker pie crusts.
I made six of them, one for you and five for me.

Chances are you haven't had this type of pie...yet.
Only a few ingredients and you're good to go.
This is all you need.
And before you go and grab that chocolate pudding, let me just tell you they make HERSHEY'S chocolate pudding!
Yes, I found it the day AFTER I made the little pies.
I almost wanted to start all over and use the Hershey's Chocolate pudding instead of chocolate fudge pudding.
You know, Hershey's would have just been perfect for the S'mores pie, right?
Anyway,  I've come to grips I didn't have the Hershey's pudding and I have to say I am pretty pleased with the taste of the chocolate fudge.
It was roasty toasty good!

Here are a few steps to making the pie.

After mixing the pudding and evaporated milk, divide between the six graham cracker pie crusts.  (You may have a little left over)

Next microwave the mini marshmallows with the remaining evaporated milk.

Stir until smooth, cool completely.

Add the cool whip to the mixture and spread over the chocolate.

Refrigerate a couple hours.

Top each pie with mini marshmallows and milk chocolate chips.

Put the mini pies on a jelly roll pan and place under broiler for a few seconds, watching carefully as the marshmallows will brown quickly!

Ingredients
  • 1 9" graham cracker crumb pie crust (or six mini graham cracker pie crusts).
  • 1 can (12 oz.) evaporated milk, divided.
  • 1 package (3.9 oz.) chocolate instant pudding and pie filling mix.
  • 3 cups mini marshmallows, divided.
  • 2 cups frozen whipped topping (cool whip), thawed.
  • 1/2 cup milk chocolate chips.
Instructions
Whisk 1 1/4 cups evaporated milk and the pudding mix in medium bowl until well blended.
Divide evenly between crusts.
Microwave 2 cups marshmallows and remaining 1/4 cup evaporated milk in microwave safe bowl, half power until melted.
Stir until smooth, cool completely.
Gently fold in the whipped topping (cool whip).
Spoon the marshmallow mixture over the chocolate layer.
Refrigerate for 2 hours or until set.
Top with remaining marshmallows and chocolate chips.
Preheat broiler and place the mini pies under the broiler for a few seconds.
WATCH carefully, they will brown very fast.
It's the perfect ending to August and beginning of September!
