The Partiologist: Recipe - Pizza Cookie!

Recipe - Pizza Cookie!

I'm kind of on a pizza kick, so I thought I'd share this idea for an after school pizza cookie.  I don't know if you really need all these photos, but I wanted to feel like an official blogger.

Cookie Pizza

Pre-heat oven to 350 degrees (sorry, I forgot to take a photo of the oven knob).
Grease and flour two 10" pans
I used Bakers Joy and lined the pans with parchment paper.

Pizza Cookie Crust

2 2/3 cup flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2 2/3 cup brown sugar (1 lb. bag)
2/3 cup butter
3 eggs
1- 6 oz. package chocolate chips

Melt butter, add brown sugar; cool 10 minutes.
Then add eggs, one at a time, beating well.
Stir in flour mixture and chocolate chips.

 Spread evenly in pans.
Bake for 25 to 30 minutes

As soon as it comes out of the oven sprinkle each crust with 1 cup marshmallows and put back into oven until marshmallows puff a little.  Then add 1/3 cup peanuts, 1/4 cup mini M & M's and drizzle with melted chocolate.

Let cool and remove from pans.
Serve it on a cake plate or...
 slice it and individually package.
A little closer please...
Or, you could box it up for a pizza delivery...
Okay, now go have yourself a little slice of pizza!

  1. Very cute, Kim! I would never have thought of slicing and bagging that way, but they look very attractive.

  8. Totally brilliant! I may have to do this for my sons upcoming birthday, they sell them at a nearby bakery but this looks like something I could actually do on my own. Thanks!
