Chocolate Gingerbread Mickey!

After making the Disney Themed Christmas Cookies, I just couldn't stop.  Maybe you don't have the time to make the Disney themed  sugar cookies?  Don't worry, with Mickey Mouse cutters and molds in hand, I put them all to good use.
Taking one of my favorite Christmas combinations, Chocolate & Gingerbread, I made Mickey cookies with chocolate Ears!  Now that's the kind of ear I'd like to nibble on.

Once the cookies were baked and cooled, I dipped those mighty mouse ears in chocolate!

They turned out so cute, wouldn't they be the perfect addition to the sweet shops at Disney? 
Here's a short tutorial on the making.
Roll and cut your favorite gingerbread dough with a Mickey Mouse cookie cutter.

Bake and cool.

While the cookies are cooling, melt a package of chocolate.
I love my chocolate dark, so I used Ghirardelli semi-sweet chocolate.  You could always use milk or even white chocolate.
I recently purchased the melting pot made by Wilton and I love the consistent temperature it keeps the chocolate.
Roll and cut green fondant with a holly plunger cutter and set aside.
Dip the ears in the chocolate and add a holly leaf and pipe three dots with red frosting for the berries.

I told you it was short!
Wouldn't you love having a bite of one of these cookies at his Very Merry Christmas Party?

I do hope I'm invited to the party next year, if not, I can always eat a cookie!

  3. I LOVE your Mickey cookies. I am a Disney nut, so I have a few Mickey cutters hanging around in my kitchen! Disney sure does need your gingerbread cookies in their sweet shops.
    I have been to MVMCP and my favorite things are the free cookies and hot chocolate. Hmm..your Mickey cookies would be perfect for that! These are awesome Kim. :)
