Besides having clowns at my party, I needed to have some circus elephants. No better way to have them perform, than on top of a muffin. A Caramel Apple Muffin. They did a great job, you know what they say, "Practice Makes Perfect"? Well, they did practice and they were perfect!

The Main Event
Before the Main Event, I made each Elephant Topper~
The elephant came in a pack to make a photo frame from Oriental Trading. Only I had other ideas. I took the elephant, put it together and added sequins and feathers and glued on a wooden pick to make them "SHOWSTOPPING" elephants!
Caramel Apple Muffins
Recipe adapted From About.Com
Ingredients:
2 Cups Flour
2 Tsp. Baking Powder
1/2 Cup Sugar
1/4 Tsp. Freshly Ground Nutmeg
1/4 Tsp. Freshly Ground Cinnamon
1/2 Tsp. Salt

1 Cup Milk
1 Egg
1/4 Cup Vegetable Oil
*****
1 Cup Sweet-Tart Medium to Large Apple, Cored, Peeled & Chopped
(Granny Smith)
Preparation:
Preheat oven to 400 degrees F. Grease 12-cup muffin tin or use paper liners. With a wire whisk combine first set of ingredients. In another bowl, combine wet ingredients. Add chopped apple and wet ingredients to dry ingredients. Stir only until moistened. Spoon into prepared muffin pan. Bake for 20 minutes or until tested done with tester.
As soon as the muffins came out of the oven, I topped with a piece of homemade caramel, let it melt and then added some pecan pieces. After they were cooled, I added another piece of caramel for the elephant to stand on!
