Puff Pastry Diamond Rings

After lots and lots of desserts, I decided to highlight one of my favorites.  And because I forgot to serve them at the party, I felt the need to give them their very own post.  I couldn't believe I forgot to serve them!
 
Elegant Puff Pastry Diamond Rings
 

Filled with Raspberry Filling and Whipped Cream~
So simple, yet elegant!
 
 
Lay out your Pepperidge Farms puff pastry sheets~
 
 
Using the diamond ring cookie cutter, cut one diamond ring.
Cut another diamond ring and cut out the center with a round cutter.
Lay the ring with the open center on top of the solid ring.
Brush with egg wash.
Sprinkle with Sugar Crystal.
(Repeat all steps until you have used all the puff pastry.)
Bake according to directions.
 
Fill with anything!  I used a Raspberry Filling and Whipped Cream~
 
 
Add the Raspberry Filling to the center of the Diamond Ring
Top with a dollop of whipped cream and serve.
 
RASPBERRY FILLING
 
1 1/2 cups frozen raspberries
1 tablespoon cornstarch
2 tablespoons fresh lemon juice
1/4 cup sugar
 
DIRECTIONS
  1. In a small sauce pan, combined all of the ingredients and slowly bring to a boil over medium-high heat (keep stirring until thickened for best results).
  2. Let cool completely before filling pastry rings.
  3. Top with whipped cream and serve.
 
Notice, I said serve - don't forget to serve!
 
 
I think I forgot to serve them because they needed to be assembled right before serving or...Maybe I forgot those little gems because everyone was in line at the buffet~

I used several yellow fans for the backdrop.

  1. I hate it when I forget to serve something at a party. Your diamonds are so pretty and I know they tasted amazing. Oh, well, it certainly looks like everything else you served was wonderful too.

  6. Oh my gosh! I've done this before too. Forgot to serve something a made because it needed last minute assembly or it was in the freezer. These tings are fabulous! I'm sorry you forgot them.

  9. What a shame your forgot to serve these! They are such a creative idea and I know everyone would have loved them. Pretty sure though, that with every other fabulous thing you did and served at this gathering no one missed them except the great hostess.

  10. What a brilliant idea Kim. I love puff pastry so much. Don't tell anyone but I actually like it raw, too. I know, I'm weird. Your rings turned out amazing. I'm sorry your guest didn't get to enjoy them, well you'll just have to throw another of your show stopping parties and make these again.:-)

    1. Thanks Hani - I haven't tried the puff pastry raw, but now I'm going to have to. I love cookie dough, noodle dough, cake batter, brownie batter, so raw puff pastry should be the next best thing!
