Bing Cherry Pie!

Today I'm sharing what I thought was a recipe that had been in the family for 100's of years, then my daughter pointed out it called for Cool Whip. After a bit of research, I found that Cool Whip was invented in 1967, so it looks like the recipe isn't 100 years old after all.  It is a recipe from my grandmother who is now 104, still living on her own.
 
As a child, when this dessert was served, I wouldn't eat it.  Now I have to make mini pies, so I don't eat the whole pie.  It's amazing what happens if you try a bite.

To make this recipe even easier, I changed the crust and used pre-made mini graham cracker crusts.


The pie gives you sweet and tart flavors in every bite.  Which is good if you're like me...needing a little tart to balance all the sweetness.

After making all the mini pies, I wrapped individually and froze, making it a dessert a day for several days.  Unless you share.

With only six ingredients, it's a snap to make.



Eaglebrand Sweetened Condensed Milk

Cool Whip

Fresh Lemons

Ready made graham cracker crusts

Walnuts

Fresh Cherries

And pitting all those cherries, doesn't have to be the pits, I'll show you how.


If you consider all the desserts made with cherries, this cherry pitter would be a good investment. 

I pitted all these cherries in minutes and the splash guard protects you from getting covered in cherry juice.

Squeeze enough lemons until you have 1/3 cup.

Mix the lemon juice and Eaglebrand milk together until smooth.

Add the carton of Cool Whip and continue mixing until completely incorporated.

Add the chopped cherries and chopped walnuts.

Scoop into prepared graham cracker crusts.

Cover individually and freeze until needed, which is probably one every day.

Ingredients
  • 12 Ready Made Graham Cracker Pie Crusts
  • 1 can Eaglebrand Sweetened Condensed Milk
  • 1/3 cup fresh lemon juice
  • 2 cups chopped pitted Bing cherries
  • 8 oz. carton of Cool Whip
  • 1 cup chopped walnuts
Instructions
 
Combine Sweetened Condensed Milk with lemon juice. Stir until thick.
 
Mix in Cool Whip until smooth.
 
Add chopped cherries and chopped walnuts.
 
Spoon into individual graham cracker crusts.
 
Serve or cover with saran wrap and freeze.
 
By the time your read this post, all the Bing Cherry Pies are probably gone.
