Espresso Chocolate Truffles!

Want a fun way to get a double whammy caffeine fix?  Add it to chocolate and by chocolate I mean Chocolate Truffles.  The most time consuming part of this project was driving all over trying to find chocolate covered espresso beans, maybe I should have made my own.  Hmmm, have you ever made your own chocolate covered espresso beans?
 
Of course they are not your ordinary round, rolled in cocoa powder, truffle.  These were whipped and piped and served in a hand made candy wrapper.

After spending hours trying to made the candy wrapper with two sided cardstock, I finally feel my mission was accomplished.
 
I would show you how, but really, who is going to ever do that?
 
I will show you the few photos I did take.

This was a jumbo pastry tip I used to pipe the truffle mixture.
 
After making the espresso truffle, instead of scooping into a ball and rolling in cocoa, I placed it in the Cuisinart and blended until it was creamy.
 
Added it to the pastry tip and piped it onto the little scalloped parchment paper I punched.
 
Then each truffle was placed into the home made candy wrapper to be served.
 
After cutting each candy wrapper with my Cricut, I folded each side up.

Now it's time for you to make your own.
Espresso Truffles

Ingredients
  • 12 ounces semisweet chocolate
  • 2 tablespoons unsalted butter, softened
  • 1 cup heavy cream
  • 3 tablespoons finely ground espresso coffee
Instructions
 
Place 12 ounces of the chocolate pieces, cream and the butter in a large saucepan.
Melt together on very LOW heat.
Stir until mixture is smooth, thick and shiny.
Remove from stove and whisk in the coffee.
Pour into a small baking pan and let set.
Once the truffles are set, whip with mixer to make it creamy.
Pour into piping bag and pipe a swirl.
 
And a sneak peek at their party debut.
 
Of course, you can always make them rolled and coated in cocoa powder.

    2. I agree with previous responses. Your tip re cutting a piece of parchment paper with a scallop cutter is genius! Can use that on many food projects.

      How many truffles does this recipe make and where did you finally find the expresso grounds?

    3. Thank you Tavette! I'm so sorry, but I don't remember how many it made. I found the chocolate covered espresso beans at Home Goods and I actually bought espresso coffee beans and had them ground into super fine grounds.
