Back to School Monster Cookies!

Whether the kids are already in school or getting ready to go back to school, these cookies will make your life easier.  Why?  Because one, they are easy to make up ahead of time and two, you can pop them in the oven whenever you need to serve an after school snack.  Or you can eat them any time of day, beginning at 9:00 a.m.  They include oatmeal.

When I started scooping the cookie dough with my largest cookie scoop, I knew why they are called monster cookies.

I decided to use one scoop size down, so maybe these cookies should be called Mini Monster Cookies?

What ever size you use, they are delicious.
 

Now here's the part that makes them easy.

They can be made up ahead of time to freeze.
 
First, add any color M & M to your mix.

Fall or school colors perhaps?

Then add your chocolate chips and mix well.

Scoop dough onto parchment lined cookie sheet and freeze. 

Or flatten cookies and bake.

Perfect for an after school snack.

Or a perfect snack before the kids get home.

You know what I'm talking about!

Monster Cookies

Ingredients
  • 1/2 cup butter (room temperature)
  • 1 cup sugar
  • 1 1/4 cup brown sugar
  • 1 3/4 cup creamy peanut butter
  • 3 eggs
  • 4 1/2 cups oats
  • 2 teaspoon baking powder
  • 1 cup M & M's
  • 1 cup chocolate chips
  • 1 teaspoon vanilla
Instructions
Preheat oven to 350 degrees.
Cream butter and sugar until blended.
Add eggs, peanut butter and vanilla, mix well.
Add remaining ingredients, mixing well.
Scoop with a cookie scoop onto parchment paper.
Flatten the cookie and bake 11 - 13 minutes until browned.
(Or freeze cookies on the sheet. After they are frozen, remove from freezer and place cookie dough balls in zip lock plastic bag. Thaw, flatten and bake)

  3. Yum yum yum!! I'll take oatmeal for breakfast, lunch AND dinner. I love cookies that we can pre-scoop and freeze to bake later! :)
