Coffee Cookies!

What could be better than drinking coffee?  Eating coffee cookies!  I don't know about you, but I couldn't start my day without coffee.  Sometimes (most of the time) I wake up in the wee hours of the morning and because I know a cup of coffee is waiting, I usually hop out of bed.  Which is a good thing because I get a lot done before 9:00 a.m. 
However, I'm usually ready for lunch at 9:30. 

It's been awhile since I've made mocha cookies and the last time I made them, I didn't have this really cool rolling pin.  Thanks to my daughter knowing what I love, I've got it. 

Coffee Cookies!

This is what you need to get started.

I decided to use the beverage cup cookie cutter.

The rolling pin has designs that will imprint your dough when rolling.



Mocha cookie dough, imprint rolling pin and cookie cutters.

That's it.

Any shape cutter would work.

  1. I don't drink coffee but am in love with this idea. Using the rolling pin to add detail to the cookies was genius! I would definitely make these for my coffee loving friends.

  4. Where did you get the little cookie cutter set that you have and the rolling pin is a bit different than the one you have a link too, which is also very cute, but just wondering where you got yours :) Thank you!!

    1. I found the little tin of cutter at Crate and Barrel, they are no longer available, but I found them on ebay here:

      And the rolling pin was a gift, so I'm not sure where my daughter got it.

  6. My coffee drink of choice is a Starbucks maybe once or twice a week. My husband is another story as I make him a pot every morning so he can fill his thermos. Your clever and oh so cute cookie would be the perfect pairing for his early morning ritual. These are awesome, Kim, and what a sweet daughter to gift you with the roller! :)

    I'm a latte (and cookie) addict and the cookies look great! I see that these cookies are much darker than the cookies shown with your linked recipe: mocha cookie crisps. did you add more cocoa or chocolate to these to get them darker brown?

    1. Thank you Jodi! I'm not sure if it was the lighting, or because I used heaping tablespoons of dark cocoa powder, these turned out darker. Hope this helps!
