Raspberry Mousse Brownies!

Today I needed to make something quick.  Quick like a fox.  Only they needed to look like they took some time.  This is what I came up with.  Raspberry Mousse Brownies.
 
 
Sometimes brownies from a box are a good thing. 
 
That is if you top them with a swirl of homemade Raspberry Mousse. 
 
And that's just what I did. 
 
After baking, cooling and cutting the brownies into squares, I placed each brownie in a cupcake wrapper and piped a swirl of Raspberry Mousse on top.
 
 
 I sprinkled the raspberry mousse with chocolate shavings.
 

Then I topped them with a conversation heart.  Who doesn't love a conversation heart?

Raspberry Mousse Brownies

 Ingredients (24 Bars)
For The Brownies
  • Use your favorite brownie recipe or mix.
For the Mousse
  • 1/4 cup butter
  • 1 8 oz. package cream cheese
  • 1 cup powdered sugar
  • 1/2 cup raspberry preserves
Instructions
For the Brownies
After baking, let the brownies cool completely - overnight in the refrigerator is best. Cut into squares. Place in individual cupcake papers.
For the Mousse
Mix butter and cream cheese until combined, add powdered sugar and continue mixing. Stir in Raspberry preserves. Fit a pastry bag with a large open star tip and add mousse. Begin piping swirls on top of each brownie.
For the Chocolate Shavings
Using a chocolate grater, shave chocolate and sprinkle on top of Raspberry Mousse.

  2. Raspberries are quickly becoming one of my favorite fruits. I can only imagine how amazing it would be with brownies!

    PS-I love the first picture in the tutorial. The Bokah effect is beautiful!

  5. YUM! I can never cook brownies correctly. They're always perfect in the middle and hard and over done on the outside. I need to learn to make perfect brownies so I can make these. Your piping is perfect too!
