Mocha Cookie Recipes!

With today being National Coffee Day, I thought I should share the two mocha cookie recipes I used in the Starbucks giveaway.  Even if you didn't win...today you're a winner, so grab a cup of coffee, a mixing bowl and start baking!

Chocolate Mocha Cookie Crisps

Mocha Chocolate Chip Cookies

Both of the recipes call for espresso powder, so this is what I did...bought a bag of Starbucks Espresso coffee beans and had them ground it into powder.  Worked like a charm!
Chocolate Mocha Cookie Crisps

Ingredients
  • 1 3/4 - 2 cups flour
  • 1 tablespoon espresso powder
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter , softened
  • 3/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
Instructions
Whisk together flour, coffee, cocoa, baking powder and salt in medium mixing bowl. Set aside. In a large bowl, beat butter, sugar and vanilla with an electric mixer at medium speed until light and fluffy. Beat in egg until well blended. Add flour mixture and beat on low speed until combined. Chill until firm.
 
Preheat oven to 350°F. with floured cookie cutters, cut desired cookie shapes. Transfer cookies to parchment paper-lined baking sheets, spacing them 1 inch apart.
Bake 10 to 12 minutes. Transfer cookies to a wire rack to cool.
 

Mocha Chocolate Chip Cookies

Ingredients
  • 1 cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1-3/4 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons espresso coffee powder
  • 1-1/2 cups semi-sweet chocolate chips
Instructions
Preheat oven to 300 degrees. Cream the butter with the sugars using an electric mixer on medium speed until fluffy. Beat in the egg and the vanilla extract. Sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.
 
Using a cookie scoop, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough Bake for about 20 minutes or until lightly browned around the edges.
