Banana Cupcakes with Cream Cheese Frosting!

These are not just Banana Cupcakes, they are cute Banana Cupcakes with Cream Cheese Frosting. What started out to be a loaf of banana bread, soon turned into cupcakes.  You could say I was monkeying around in the kitchen.

Let me explain...

I had bananas ripening on the counter, I could either throw them out, or make them into banana bread.  I choose the later.

Soon after that thought came another, why not cupcakes?


So I began baking and my plan was to put a dollop of frosting on the top with a dried banana chip.  Simple, right?

While the cupcakes were in the oven,  I thought about my slogan "You are what you eat, so eat something cute".  And if you've seen me lately, I need to start eating cuter food.

That's when the little monkey came into play.  I mean, how cute are these?  And they're still simple.

And wouldn't they be cute for a Curious George party?


With the premade monkey toppers, they were complete in minutes!

Banana Cupcakes with Cream Cheese Frosting

Ingredients
  • For the Cupcakes
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 2 cups sifted flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts (optional)
  • For the Frosting
  • 1 cup butter
  • 2 - 8 oz. pkg. cream cheese
  • 1 tsp. vanilla
  • 2 lbs. powdered sugar
Instructions

*For the Cupcakes*
Preheat oven to 350
Cream shortening and sugar together.
Beat eggs until light and add to sugar mixture.
Mash bananas and blend with creamed mixture.
Sift flour, baking powder and salt together and mix quickly into banana mixture.
Add nuts if desired.
Spoon into lined muffin cups.
Bake 15 - 20 minutes or until a toothpick comes out clean.
*For the Frosting*
Mix cream cheese and butter until smooth and creamy.
Add vanilla and powdered sugar.
Continue mixing until smooth.
