A few years ago I had the pleasure of traveling to beautiful Victoria Island, Canada. One of the things I remember the most is seeing Ice Wine in just about everything... teas, hard candy and chocolate to name a few.
After returning home, I decided to do a little research and see if I could find a bottle of Ice Wine and make my own Ice Wine Truffles. It wasn't easy finding the Ice Wine, but when I set my mind to do something, I don't stop. The first thing that came to mind while making the truffles, was how to display them. They were too special to line up on a tray, in a candy wrapper. Immediately it came to me, a cluster of grapes!

Ice Wine Truffles
I coated them in sparkling sugar because according to Wikipedia "Ice wine is a type of dessert wine produced from grapes that have been frozen while still on the vine."
And because I wanted to.
Don't you think making them into a cluster of grapes is perfect for serving?
And they were quite simple to make.
Here's that special bottle of Ice Wine.
I don't usually drink wine, but in this case I had to.
And if I ever start drinking wine, I'm pretty sure this would be it.
After making the chocolate truffle mixture, set in frig until solid.
Remove as soon as it's firm enough, scoop out the chocolate and roll between palms to make balls.
Make different size balls, because grapes are all sizes, right?
Roll the balls into the sparkling sugar.
Set aside on parchment paper.
I used a wood server for the grape cluster.
Stack the truffles, making a cluster of grapes.
Add leaves and vine for décor.

You don't have to go to Canada for your Ice Wine Truffles, because you can make your own.
